Farm Field Day with W&M Sustainability Group

The William and Mary Sustainability Group held a successful  Field Day here at our farm.

Tomato, Mozzarella, & Basil Chicken

Tomato, Mozzarella, & Basil Chicken

Here’s what you’ll need:

* ½ pound asparagus, trimmed

* Olive oil, to taste

* Salt, to taste

* Pepper, to taste

* 1 garlic clove, minced

* 1 chicken breast

* Fresh mozzarella, sliced

* 1 tomato, sliced

* Fresh basil (3-4 leaves)

* Parchment paper

And here’s what you’ll need to do:

1.Preheat oven to 400°F/200°C.

2.Place asparagus into mixing bowl and thoroughly coat with olive oil, salt, pepper, and garlic.

3.Tear off a sheet of parchment paper, large enough to fold into a packet. Place chicken breast on top and season with salt and pepper. Place mozzarella, tomato, and basil on top.

4.Fold the edges of the parchment paper widthwise 2-3 times then twist the ends until fully closed.

5.Bake for 20-25 minutes or until internal temperature reaches 165°F/74°C.
