Sweet Potato Garlic Fries with Sriracha Dip

Sweet Potato Garlic Fries with Sriracha Dip

1-20. oz bag frozen sweet potato fries {I’m partial to Trader Joes brand. The Ore Ida brand is a quick second.}
1 teaspoon salt
1/4 teaspoon course ground black pepper
6 chives, chopped finely
2 cloves garlic, fine minced

for the sauce:
1/4 cup real mayonnaise
1 tablespoon sriracha sauce

Cook sweet potato fries on a baking sheet according to package directions. The ones from Trader Joes seem to get the crispiest. If you can’t find those, then give the Ore Ida ones a whirl. They are a good backup option.
While fries are cooking, stir salt, pepper, chives and garlic together in a small bowl. {If you don’t mind larger chunks of garlic, use a knife and cutting board. If you’d like smaller pieces, use a garlic press.}
Once fries are done cooking, sprinkle with garlic salt mixture and toss. Let cool 5 minutes.
For the sriracha sauce, stir mayo and sriracha together until combined. {Feel free to add in more or less sriracha, according to your liking.} Spoon into a serving bowl. Add fries to a serving dish beside sauce and serve. These serving cones are pretty cool.

**Feel free to adjust the salt and garlic amounts depending on preference.  I love a lot of garlic and feel that the store bought fries need all the salt they can get, but feel free to adjust it to your taste.
