KelRae’s Roasted Petite Sweet Potatoes

  • Wash the sweet potatoes well, leaving the skins on.
  • Place on a paper towel and allow to dry a little.
  • Add the sweet potatoes and a little olive oil to a ziploc bag and toss around.
  • Allow the sweet potatoes to marinate in the olive oil for about 20 to 30 minutes.
  • Toss the sweet potatoes with your favorite seasonings. See suggestions for seasonings below.
  • Lay the sweet potatoes on a cookie sheet or stone.
  • Roast in a 400° oven for about 20 minutes or so, or just until they are soft on the inside and crispy on the outside.

These roasted petite sweet potatoes are amazing with the skins left on and make for a great snack or appetizer!

Here are a few suggestions for seasonings:

  • Old Bay
  • crushed red pepper
  • cinnamon and sugar
  • Cajun spices
  • oregano
  • rosemary

 They really will taste delicious with just about any seasoning!
